English Cucumber and Red Bell Pepper Salad

 


This is a good salad for meal planning, because the vegetables don't wilt the way lettuce does. It's also a great way to use the Ranch Dressing recipe. Here's how:

~ Serves 8 as a side, or 12 as a meal. ~

Ingredients:

  • 4 large English cucumber (sometimes called "hot house"), diced. 
  • 8 red bell peppers, diced. 
  • The entire Ranch Dressing recipe. 
Directions:
  1. Mix everything together and serve immediately, or store in the fridge for up to one week. 
  2. When eating as leftovers, strain the salad through a sieve, because the dressing gets too thin as it sits, but the vegetables are even better and more seasoned than they were when this was first prepared.
