Hash Browns

If you are a potato lover, this is the best way to have them, and I'm sure you'll agree. It takes 1.5 hours to bake them, and they don't keep well, but they are fool-proof and totally worth it. Here's how:

Ingredients:

  • 2-3 yellow potatoes per person.
  • salt to taste.
  • pepper to taste.
  • 2 Tbsp. melted butter per person.
Directions:
  1. Peel and grate the potatoes and place them into a bowl.
  2. Pick up a handful of grated potatoes at a time and squeeze out the liquid with your hands over the bowl, then place them into a separate bowl. Repeat until all of your potatoes have been squeezed.
  3. Then add salt, pepper and melted butter. Stir.
  4. Grab about 1/4 cup of hash brown mixture at a time, and place it onto a baking sheet lined with nonstick foil. Flatten it down gently so it looks more like a pancake.
  5. Repeat until you have 6 patties (if you're making 2 servings), or until your baking sheet is filled up.
  6. You can fill multiple baking sheets at the same time if you're making a lot.
  7. Bake at 350 degrees Fahrenheit for 1.5 hours, flipping after 45 minutes.
