Onion Jam

Ingredients:

  • 7 pounds of yellow onions 
  • 2 tbsp EVOO
  • Up to 1 cup brown sugar 
Directions:
  1. Cut up onions into chunks and toss into a 6-quart Dutch oven.
  2. Add remaining ingredients and cook on low for 4 hours, making sure not to burn by stirring every 3-5 minutes.
  3. Blend in Vitamix blender.
  4. Continue to simmer on the stove until onions reduce into a dough-like jam.
Serves 20 as a spice.
