Red Bird with Bagel and Gravy



I don't know if Red Bird is popular, but it's what a local restaurant calls chicken dipped in hot sauce (Red Bird) topped with pepper Jack served with Ranch. 

You can bake it in the oven with a premade frozen bagel, and you've got yourself an on-demand meal. 

You also have to pre-make the gravy, but it goes so well with a good bagel!

Here's how you make it...

Ingredients:

  • 1 pre-brined chicken breast per person.
  • 1 tbsp melted butter per person.
  • 2 tbsp Louisiana or Cholula hot sauce per person.
  • 1 frozen Ray's New York Everything Bagel per person.
  • 1/4 cup homemade Ranch per person.
  • 2 slices thin pepper jack per person.
  • 1/2 cup hatch chili gravy per person.
Directions:
  1. Preheat oven to 425 degrees Fahrenheit.
  2. Line 1/2 a baking sheet with nonstick foil that has been folded up on all sides to prevent spilling.
  3. Repeat on the other 1/2 of baking sheet for the bagels.
  4. Rinse chicken well and pat it dry with a paper towel.
  5. Place it on one half of the baking sheet. 
  6. Repeat with however many servings you're making.
  7. Place bagel(s) on other half of foil.
  8. Melt butter in the microwave (in a bowl obvs) for 20 seconds, stir and repeat.
  9. Mix with hot sauce.
  10. Pour over chicken and flip to coat.
  11. Bake at 425 degrees Fahrenheit for 6 minutes.
  12. Remove bagels and set aside.
  13. Flip chicken and continue to bake for 6 minutes.
  14. When timer goes off, don't open the oven door. Leave it in the oven for 10 more minutes.
  15. While that's cooking, slice your bagel(s) in half and transfer to serving plate.
  16. Heat gravy in the microwave until hot.
  17. Fill up a small plastic dip container with ranch.
  18. When chicken is done, top with pepper jack cheese and microwave for 30 seconds.
  19. Serve!
