Quick sheetpan dinner (keto)

 


I do well on meat based keto, or ketovore, but I enjoy low carb vegetables when I'm just starting out. My favorite green veg is bell pepper, and I love anything with cheese. 

Ingredients:

  • 8 oz button or baby bella mushrooms 
  • 2-3 green bell peppers 
  • NY Strip steak (not thin) cut into two 4-6 oz portions 
  • Herb cream cheese
  • Salt and pepper to taste 

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Clean, dry and chop the bell peppers.
  3. Rinse the shroomies and separate the stems from the caps.
  4. Line a baking sheet with foil, and top it with a wire rack.
  5. Place the bell peppers and shroomies (cap-side down) on the rack.
  6. Add the stems where they'll fit.
  7. Bake for 15 minutes. 
  8. Toss the peppers with tongs, and empty the caps of their liquid.
  9. Turn the oven to high broil. Add the steaks to the rack and broil for 6 minutes.
  10. Flip the steaks and fill the shroomies with herb cheese, and toss the peppers with tongs.
  11. Broil on low for 5 minutes.
