I do well on meat based keto, or ketovore, but I enjoy low carb vegetables when I'm just starting out. My favorite green veg is bell pepper, and I love anything with cheese.
Ingredients:
- 8 oz button or baby bella mushrooms
- 2-3 green bell peppers
- NY Strip steak (not thin) cut into two 4-6 oz portions
- Herb cream cheese
- Salt and pepper to taste
Directions:
- Preheat oven to 350 degrees Fahrenheit.
- Clean, dry and chop the bell peppers.
- Rinse the shroomies and separate the stems from the caps.
- Line a baking sheet with foil, and top it with a wire rack.
- Place the bell peppers and shroomies (cap-side down) on the rack.
- Add the stems where they'll fit.
- Bake for 15 minutes.
- Toss the peppers with tongs, and empty the caps of their liquid.
- Turn the oven to high broil. Add the steaks to the rack and broil for 6 minutes.
- Flip the steaks and fill the shroomies with herb cheese, and toss the peppers with tongs.
- Broil on low for 5 minutes.
