This is basically stuffed mushrooms 🍄
You can eat the filling for the mushrooms by itself with a spoon. I like to make some for when I'm cooking, and I drink apple (or peach, or cherry, or raspberry) Lambic. It's my version of wine and cheese. I should make a separate post for that!
Ingredients:
- 1 pound button or baby bella mushrooms
- 8 oz cream cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
Directions:
- Clean the mushrooms well, and place them (stem-side up) on a baking sheet lined with foil and topped with a baking wrack.
- Pop the stems off and find a place for them in between the mushroom caps.
- Preheat the oven to 350 degrees Fahrenheit.
- Cook the shroomies for 15 minutes, then dump the liquid from the caps with a pair of tongs.
- In a microwave safe bowl, add cream cheese, and spices. Cook for 30 seconds and stir well. Add another 30 seconds if absolutely necessary.
- Fill the center of the mushroom caps with the cheese filling, and bake for 15 more minutes.
Note: you can top the cheese with panko before baking it, if you're not doing keto.
