Herb cheese shroomies

 


This is basically stuffed mushrooms 🍄 

You can eat the filling for the mushrooms by itself with a spoon. I like to make some for when I'm cooking, and I drink apple (or peach, or cherry, or raspberry) Lambic. It's my version of wine and cheese. I should make a separate post for that!

Ingredients:

  • 1 pound button or baby bella mushrooms 
  • 8 oz cream cheese 
  • 1/4 tsp salt
  • 1/4 tsp pepper 
  • 1/2 tsp garlic powder 
  • 1/2 tsp Italian seasoning 
Directions:
  1. Clean the mushrooms well, and place them (stem-side up) on a baking sheet lined with foil and topped with a baking wrack.
  2. Pop the stems off and find a place for them in between the mushroom caps.
  3. Preheat the oven to 350 degrees Fahrenheit.
  4. Cook the shroomies for 15 minutes, then dump the liquid from the caps with a pair of tongs.
  5. In a microwave safe bowl, add cream cheese, and spices. Cook for 30 seconds and stir well. Add another 30 seconds if absolutely necessary.
  6. Fill the center of the mushroom caps with the cheese filling, and bake for 15 more minutes.
Note: you can top the cheese with panko before baking it, if you're not doing keto.
