Kale Crunch Salad

 


This is inspired by Chick-Fil-A, if that's not obvious, only it's got clean ingredients.

Ingredients:

  • 2 bunches lacinto kale, or the other kind.
  • 1 small head of nappa cabbage 
  • 1/2 cup roasted and salted and shelled sunflower seeds
  • 1 recipe prepared Apple Cider Dijon Dressing 
Directions:
  1. Trim and de-stem the kale. Rinse it well and cut it into ribbons.
  2. Trim, de-stem and rinse the cabbage. Cut it into ribbons as well.
  3. Cover with dressing and sunflower seeds. Stir well. 
  4. Portion into individual storage containers and store overnight before eating. Keeps for a week.
Serves 4.
