Garlic Raisin Salad

 


I was craving the Waldorf salad from my blog, but it was gonna take too long, so this is a simplified version of it. 

Goes great with Curry Chicken Chili.

Ingredients for the salad:

  • 1/2 red bell pepper per person. 
  • 1/2 orange bell pepper per person. 
  • 1 celery stalk per person. 

Ingredients for the dressing:

  • 2 tbsp mayo per person. 
  • 1/4 cup raisins per person. 
  • 1/2 tsp garlic powder per person. 
Directions for the salad:
  1. Rinse, dry, de-stem and de-core the bell peppers. Dice them. 
  2. add half of each of them to individual serving bowls. 
  3. rinse, scrub, trim and slice the celery into 1/2 inch pieces (crosswise). 
  4. add 1 per person to individual serving bowls with the peppers. 
  5. stir well. 
Directions for the dressing:
  1. add the ingredients for the dressing to each of the serving bowls. 
  2. stir well.
