Chicken Bijan Pinwheels

 

I don't think chicken bijan is a real thing, but I'm naming it after the entree from a restaurant that has this in sandwich form. 

I need to make a recipe for a bulk spread, but this'll have to do for now - I'm lazy. Plus, the basil will wilt when stored with cheese.

Ingredients:

  • 1 "Tortilla Land" tortilla.
  • 2 tbsp Boursin (garlic and fine herbs) cheese.
  • 4 slices hickory smoked chicken lunch meat.
  • 2 tablespoons fresh basil 🌿 
  • 1 tablespoons diced onion.

Directions:
  1. Cook the tortilla according to package instructions.
  2. Slather with boursin cheese.
  3. Rinse and trim basil, and cut it into ribbons.
  4. Add it to the boursin cheese. 
  5. Dice the onion. Add it to the Boursin cheese. 
  6. Double up the chicken slices, and lay 2 on one end, and 2 on the other end.
  7. Roll the tortilla up from one empty chicken side to the other.
  8. Slice into pinwheels.
Great for a potluck alongside pimiento cheese pinwheels
