I don't think chicken bijan is a real thing, but I'm naming it after the entree from a restaurant that has this in sandwich form.
I need to make a recipe for a bulk spread, but this'll have to do for now - I'm lazy. Plus, the basil will wilt when stored with cheese.
Ingredients:
- 1 "Tortilla Land" tortilla.
- 2 tbsp Boursin (garlic and fine herbs) cheese.
- 4 slices hickory smoked chicken lunch meat.
- 2 tablespoons fresh basil 🌿
- 1 tablespoons diced onion.
Directions:
- Cook the tortilla according to package instructions.
- Slather with boursin cheese.
- Rinse and trim basil, and cut it into ribbons.
- Add it to the boursin cheese.
- Dice the onion. Add it to the Boursin cheese.
- Double up the chicken slices, and lay 2 on one end, and 2 on the other end.
- Roll the tortilla up from one empty chicken side to the other.
- Slice into pinwheels.
Great for a potluck alongside pimiento cheese pinwheels.
Also goes great with jambalaya.
