These cookies have a muffin texture, because of the amount of fibrous fruit in them 🍓.
They are VERY strongly flavored though, so you might forgive them.
Follow the instructions for my Caramel Coconut Cookies, with these modifications:
- Instead of coconut, use 2/3 cup old-fashioned rolled oats.
- Instead of brown sugar, use a 21-oz can of Strawberry Pie Filling.
- Instead of chocolate chips, use 3 (4 oz) bars of Lindt White Chocolate (chopped).
- Instead of coconut and vanilla extract, use 2 tsp of strawberry extract.
- Only use half the caramel mixture when it's time to combine it with the flour, because these are very wet cookies.
