This is a mashup of 2 great dishes; 1.) sausage, cabbage and tomatoes, and 2.) Sausage, Potatoes and Kale.
They didn't have kale at Walmart (it's 2023 and an early sign of upcoming food shortages), so I bought cabbage instead.
While I was making this, I remembered dish number one and decided to throw in petite diced tomatoes as well.
Ingredients:
- 5 pounds russet potatoes, chopped
- 3 pounds of sausage
- 1/4 cup dry white cooking wine
- 1 head green cabbage, shredded
- 1 can petite diced tomatoes
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp ground black pepper
- 2 tsp salt
- 3 tablespoons soy sauce
- 1 stick unsalted butter
- 2 bottles or 32 ounces water
Directions:
- In an instant pot, sauté the sausage on high for 20 minutes, stirring regularly.
- While that's cooking, peel and rinse the potatoes.
- When the sausage is 75% cooked and sticking to the bottom, add dry white wine and stir well.
- Turn off the sauté-er when the 20 minutes are up, and chop the potatoes.
- Toss them into the pot.
- Prepare the cabbage, and toss it into the pot.
- Add remaining ingredients, and cook on high pressure for 40 minutes.
