Corny Chowder

 

I don't even know what normal corn chowder tastes like, but this is my version of it. It's got salsa and cheese and chili powder and onions. It's fire. 

Ingredients:

  • 1 can whole kernel corn, drained.
  • 1 cup water.
  • 2/3rds cup of sharp cheddar cheese (shredded).
  • 2 tbsp cream cheese.
  • 1/2 cup Pace verde salsa.
  • 1/2 onion, diced.
  • 1 tsp chili powder (not a blend).
  • Optional: 1 tbsp jarred lemon juice (without preservatives).
  • 1/4 tsp garlic powder.
  • 1/4 tsp onion powder 
  • 1/8 tsp salt
  • 1/4 tsp black pepper.
Directions:
  1. In a microwave safe bowl, add water and onions.
  2. Microwave for 4 minutes.
  3. Add remaining ingredients and microwave for 3.5 more minutes.
  4. Stir well.
  5. Transfer to a less hot bowl for serving.
