I don't even know what normal corn chowder tastes like, but this is my version of it. It's got salsa and cheese and chili powder and onions. It's fire.
Ingredients:
- 1 can whole kernel corn, drained.
- 1 cup water.
- 2/3rds cup of sharp cheddar cheese (shredded).
- 2 tbsp cream cheese.
- 1/2 cup Pace verde salsa.
- 1/2 onion, diced.
- 1 tsp chili powder (not a blend).
- Optional: 1 tbsp jarred lemon juice (without preservatives).
- 1/4 tsp garlic powder.
- 1/4 tsp onion powder
- 1/8 tsp salt
- 1/4 tsp black pepper.
Directions:
- In a microwave safe bowl, add water and onions.
- Microwave for 4 minutes.
- Add remaining ingredients and microwave for 3.5 more minutes.
- Stir well.
- Transfer to a less hot bowl for serving.
