Other than chopping vegetables, which I happen to enjoy, this dish is frickin' easy. You cook the pasta in the microwave, and the Alfredo makes itself in the oven. You're welcome 😁.
Serves 4.
Ingredients:
- 1 large zucchini.
- 1 large yellow onion.
- 8 ounces button mushrooms.
- 1 green bell pepper.
- 1 bunch spring onions.
- 20 cherry tomatoes.
- 1 bunch fresh basil.
- 4 cloves garlic.
- 1 bunch fresh parsley (optional).
- 2 packages Maruchan Ramen Noodles (flavoring discarded).
- 2 cups water.
- 6 ounces shredded parmesan cheese (like Great Value).
- 8 ounces cream cheese.
- 2 tablespoons EVOO.
- Salt and pepper to taste.
Directions:
- Rinse all the vegetables except for the yellow onion, and dry well.
- Slice the zucchini into 1/4 inch half moons, and place it into a large bowl.
- Dice the yellow onion, and add it to the zucchini.
- Pop the stems out of the mushroom caps, and slice all of them. Add them to the zucchini and onions.
- Dice the bell pepper and add it to the zucchini, onions, and mushrooms.
- Pour all of this into an oven safe casserole dish.
- Add EVOO, and toss to coat.
- Bake at 350 degrees Fahrenheit for 20 minutes.
- While that's baking, slice the green onion, and add it to a large bowl.
- Cut the cherry tomatoes in half and add them to the spring onions.
- Mince the basil, and add it to the green onions and cherry tomatoes.
- Mince the garlic, and add it to the green onions, cherry tomatoes and basil. Set aside.
- Mince the parsley, and add it to a separate bowl. Set aside.
- Remove vegetables from oven, and use tongs to toss them around.
- Bake them again at 350 degrees Fahrenheit for 20 more minutes.
- In a 2.5 quart microwave safe bowl, add 1 package of Ramen noodles (without seasoning) and 1 cup of water.
- Microwave on high for 4 minutes.
- Use a fork to break up the noodles. Set aside.
- In a separate microwave safe bowl, add the other package of Ramen noodles (without seasoning), and 1 cup of water.
- Microwave on high for 4 minutes.
- Break up the noodles with a fork.
- Add these noodles to the other bowl of noodles, and add cream cheese.
- Microwave again for 4 minutes.
- Transfer noodles with cream cheese to a 9 x 13 inch casserole dish.
- Add parmesan cheese, and salt and pepper to taste. Stir well.
- Top with all of the spring onion, basil, tomato, garlic mixture.
- Top with 1/3 of the parsley.
- Top with all of the roasted vegetables.
- Bake at 400 degrees Fahrenheit for 20 minutes. Stir well.
Goes great with Ribeye steaks.
