Ramen Alfredo Bake

Other than chopping vegetables, which I happen to enjoy, this dish is frickin' easy. You cook the pasta in the microwave, and the Alfredo makes itself in the oven. You're welcome 😁. 

Serves 4.


Ingredients:

  • 1 large zucchini.
  • 1 large yellow onion. 
  • 8 ounces button mushrooms. 
  • 1 green bell pepper. 
  • 1 bunch spring onions. 
  • 20 cherry tomatoes. 
  • 1 bunch fresh basil. 
  • 4 cloves garlic. 
  • 1 bunch fresh parsley (optional). 
  • 2 packages Maruchan Ramen Noodles (flavoring discarded).
  • 2 cups water. 
  • 6 ounces shredded parmesan cheese (like Great Value).
  • 8 ounces cream cheese. 
  • 2 tablespoons EVOO. 
  • Salt and pepper to taste. 
Directions:
  1. Rinse all the vegetables except for the yellow onion, and dry well. 
  2. Slice the zucchini into 1/4 inch half moons, and place it into a large bowl. 
  3. Dice the yellow onion, and add it to the zucchini. 
  4. Pop the stems out of the mushroom caps, and slice all of them. Add them to the zucchini and onions. 
  5. Dice the bell pepper and add it to the zucchini, onions, and mushrooms. 
  6. Pour all of this into an oven safe casserole dish. 
  7. Add EVOO, and toss to coat. 
  8. Bake at 350 degrees Fahrenheit for 20 minutes. 
  9. While that's baking, slice the green onion, and add it to a large bowl. 
  10. Cut the cherry tomatoes in half and add them to the spring onions. 
  11. Mince the basil, and add it to the green onions and cherry tomatoes. 
  12. Mince the garlic, and add it to the green onions, cherry tomatoes and basil. Set aside. 
  13. Mince the parsley, and add it to a separate bowl. Set aside.
  14. Remove vegetables from oven, and use tongs to toss them around. 
  15. Bake them again at 350 degrees Fahrenheit for 20 more minutes. 
  16. In a 2.5 quart microwave safe bowl, add 1 package of Ramen noodles (without seasoning) and 1 cup of water. 
  17. Microwave on high for 4 minutes. 
  18. Use a fork to break up the noodles. Set aside. 
  19. In a separate microwave safe bowl, add the other package of Ramen noodles (without seasoning), and 1 cup of water. 
  20. Microwave on high for 4 minutes. 
  21. Break up the noodles with a fork. 
  22. Add these noodles to the other bowl of noodles, and add cream cheese. 
  23. Microwave again for 4 minutes. 
  24. Transfer noodles with cream cheese to a 9 x 13 inch casserole dish. 
  25. Add parmesan cheese, and salt and pepper to taste. Stir well. 
  26. Top with all of the spring onion, basil, tomato, garlic mixture. 
  27. Top with 1/3 of the parsley. 
  28. Top with all of the roasted vegetables. 
  29. Bake at 400 degrees Fahrenheit for 20 minutes. Stir well. 
Goes great with Ribeye steaks.
