This is a classic grandma-style banana pudding, but I thought I'd see if it would set up in a high speed blender. It does!
Ingredients:
- 4 cups whole milk.
- 6 egg yolks, I like Fit Hen brand from Walmart.
- 1/8 tsp salt.
- 1/3 cup sugar (double if you don't want semi-sweet).
- 6 tbsp corn starch.
- 2 tsp vanilla extract.
Add-in's:
- 6 bananas.
- 11 ounce box of Nilla Wafers (I like mini).
- 6 tbsp unsalted butter, I like Kerrygold.
Directions:
- Add all of the ingredients to a high speed blender, like Vitamix or Blendtec (not Ninja).
- Make sure the little knob inside the lid is set to vent.
- Blend on 5 minutes 40 seconds, or whatever presetting has that amount of time. (Note: save your ear drums while this is blending. Go outside).
- At this point the starch won't be fully cooked yet, so add butter and repeat blending for another 5 minutes 40 seconds. (Note: it might separate a little into curds and whey, but it'll still taste the same. Texture too.)
- Transfer to a glass storage bowl with lid and refrigerate for 1 hour.
- Peel and slice bananas. Add them to the pudding.
- Top with Nilla Wafers. Stir gently with rubber spatula.
- Refrigerate for 8 hours. Keeps for a week in the fridge.
