Banana Pudding Cooked in a Blender

 



This is a classic grandma-style banana pudding, but I thought I'd see if it would set up in a high speed blender. It does! 

Ingredients:

  • 4 cups whole milk.
  • 6 egg yolks, I like Fit Hen brand from Walmart.
  • 1/8 tsp salt. 
  • 1/3 cup sugar (double if you don't want semi-sweet).
  • 6 tbsp corn starch. 
  • 2 tsp vanilla extract. 
Add-in's:
  • 6 bananas. 
  • 11 ounce box of Nilla Wafers (I like mini). 
  • 6 tbsp unsalted butter, I like Kerrygold. 
Directions:
  1. Add all of the ingredients to a high speed blender, like Vitamix or Blendtec (not Ninja).
  2. Make sure the little knob inside the lid is set to vent.
  3. Blend on 5 minutes 40 seconds, or whatever presetting has that amount of time. (Note: save your ear drums while this is blending. Go outside).
  4. At this point the starch won't be fully cooked yet, so add butter and repeat blending for another 5 minutes 40 seconds. (Note: it might separate a little into curds and whey, but it'll still taste the same. Texture too.)
  5. Transfer to a glass storage bowl with lid and refrigerate for 1 hour. 
  6. Peel and slice bananas. Add them to the pudding.
  7. Top with Nilla Wafers. Stir gently with rubber spatula. 
  8. Refrigerate for 8 hours. Keeps for a week in the fridge.
