Apple Cider Vinegar Chicken Salad with Bell Pepper and Avocado

 


Hey hubs, I love you. When you ask me what to make with what we have on hand this week, here’s your answer. Hopefully you’re in the mood for something cold. I had this with 1 cup of chicken stock (needs salt) on the side. Heat the stock for 1 minute in the microwave.

I think I just found the perfect 2MAD keto meal  (Maybe choose any bell pepper other than yellow, because they have 10g carbs?).

Ingredients:

  • 1 bell pepper (any color), rinsed, cored and sliced. 
  • 1 avocado, pitted, and scooped out with a spoon. 
  • 4 ounces leftover chicken
  • 1 tbsp apple cider vinegar (raw). 
  • 1 tbsp EVOO. 
  • 2 tsp Louisiana hot sauce. 
  • 1/8 tsp black pepper. 
  • 1/8 salt. 
  • 5 Castelvetrano Olives. 
  • 1 hard boiled egg yolk. 
  • Optional: a couple dashes of Everything Bagel seasoning. 
Directions:
  1. Just mix it all together. It’s so good.
