Apples with Salsa, Almond Butter and Avocados


This might be my favorite healthy meal. It feels like it’s cooked, with the warmth of the salsa and the earthiness of the almond butter. It has subtly sweet fibrous apples and rich fatty ripe avocados. It’s an unusual combo, but it’s one of the most satisfying meals I’ve ever eaten. 

~Serves 8~

Ingredients:

  • 1 to 2 Red Delicious apples per person, times 8 (I just buy a 5 pound bag). 
  • 1 jar almond butter (12 ounce jar), no palm oil or sugar. 
  • 2 cans Great Value fire roasted salsa (15.5 ounce cans). 
  • 8 avocados, or 1 recipe Cilantro Lime Pepper Sauce
Directions:
  1. To serve, place 1/4 can salsa in a serving bowl (per person). 
  2. Top with 1 to 2 Red Delicious apples that have been rinsed, cored and diced. 
  3. Drizzle with 1.5 ounces or 3 Tbsp. Almond butter. 
  4. Top with diced avocado. Serve.
