Ingredients for the steaks:
- 4 Ribeye Steaks, cut 1 inch thick.
- 1 Tbsp. EVOO (for steak rub).
- 1/2 tsp. salt (for steak rub).
- 1/2 tsp. pepper (for steak rub).
Ingredients for the sauce:
- 1 small yellow onion, finely diced.
- 5 garlic cloves, minced.
- 1 pound white button mushrooms, sliced.
- 1 bunch green onions, trimmed and chopped.
- 1 bunch fresh parsley, minced.
- 2 Tbsp. EVOO (for frying).
- 2 Tbsp. butter (for frying).
- 1/4 cup brandy.
- 1/2 small can of tomato paste.
- 1 Tbsp. mustard.
- 1 Tbsp. Worcestershire sauce.
- 1 Tbsp. soy sauce.
- 1 pint of heavy whipping cream.
- 1/2 tsp salt.
- 1/2 tsp black pepper.
Directions for the steaks:
- Preheat the oven to 170 degrees Fahrenheit.
- Line a baking sheet with foil, and top it with a wire rack.
- Pat steaks completely dry, then place them on the wire rack and bake for 1 hour, turning midway through.
- Remove from oven and brush with EVOO on all sides, then season with salt and pepper on all sides.
- Heat a skillet over medium-high, and fry steaks on both sides until they reach desired doneness (about 4 minutes on the first side, then 2 minutes on the flip side).
- Transfer steaks to a separate dish and make the sauce in the same pan.
Directions for the sauce:
- Add onions and mushrooms to the pan, and cook until almost done (about 20 minutes).
- Add brandy.
- Then, while making sure you quickly move your hand away from the flame, light the brandy on fire.
- Gently toss the vegetables around in the fire until the flame burns out (about 1 minute).
- After 30 more seconds, add garlic, tomato paste, mustard, Worcestershire sauce, soy sauce, and heavy cream.
- Cook until sauce reduces 20% (about 10 minutes), stirring often.
Add 3/4 cup of sauce per person to a dish with a shallow well. Top with cooked steak and garnish with parsley.
Serves 4.
