Steak Diane


These are totally inspired by SAM THE COOKING GUY on YouTube. Check him out. 

Ingredients for the steaks: 
  • 4 Ribeye Steaks, cut 1 inch thick. 
  • 1 Tbsp. EVOO (for steak rub). 
  • 1/2 tsp. salt (for steak rub). 
  • 1/2 tsp. pepper (for steak rub). 
Ingredients for the sauce:
  • 1 small yellow onion, finely diced.  
  • 5 garlic cloves, minced. 
  • 1 pound white button mushrooms, sliced. 
  • 1 bunch green onions, trimmed and chopped. 
  • 1 bunch fresh parsley, minced. 
  • 2 Tbsp. EVOO (for frying). 
  • 2 Tbsp. butter (for frying). 
  • 1/4 cup brandy
  • 1/2 small can of tomato paste. 
  • 1 Tbsp. mustard. 
  • 1 Tbsp. Worcestershire sauce. 
  • 1 Tbsp. soy sauce. 
  • 1 pint of heavy whipping cream. 
  • 1/2 tsp salt. 
  • 1/2 tsp black pepper. 
Directions for the steaks:
  1. Preheat the oven to 170 degrees Fahrenheit. 
  2. Line a baking sheet with foil, and top it with a wire rack. 
  3. Pat steaks completely dry, then place them on the wire rack and bake for 1 hour, turning midway through. 
  4. Remove from oven and brush with EVOO on all sides, then season with salt and pepper on all sides. 
  5. Heat a skillet over medium-high, and fry steaks on both sides until they reach desired doneness (about 4 minutes on the first side, then 2 minutes on the flip side). 
  6. Transfer steaks to a separate dish and make the sauce in the same pan. 
Directions for the sauce:
  1. Add onions and mushrooms to the pan, and cook until almost done (about 20 minutes). 
  2. Add brandy. 
  3. Then, while making sure you quickly move your hand away from the flame, light the brandy on fire. 
  4. Gently toss the vegetables around in the fire until the flame burns out (about 1 minute). 
  5. After 30 more seconds, add garlic, tomato paste, mustard, Worcestershire sauce, soy sauce, and heavy cream. 
  6. Cook until sauce reduces 20% (about 10 minutes), stirring often. 
Plating: 

Add 3/4 cup of sauce per person to a dish with a shallow well. Top with cooked steak and garnish with parsley. 

Serves 4.
