The secret to English Pub Fries is just to pre-boil them before you bake them. And if you don't know by now, I microwave things instead of boiling them, if I can get away with it. Here's how:
Ingredients:
- 2.5 pounds yellow potatoes.
- 1 tsp. salt.
- 1 tsp. black pepper.
- 2 Tbsp. EVOO.
Directions:
- Peel potatoes, then cut them in half, length-wise.
- Pick up one half and place it on it's side.
- While holding the potato in place, make a parallel cut about 1/2 inch from original cut.
- Repeat 2 more times per half potato, or until you run out of potato.
- Then, take each one of those super fat chips, and cut them length-wise into fries.
- Repeat for all potatoes.
- Place fries in a 2.5 quart glass bowl, and fill with water until just covered.
- Microwave on high for 10 minutes.
- Remove from microwave. Drain.
- Add salt, pepper and EVOO to fries, and toss with hands to coat.
- Transfer fries to a baking sheet lined with nonstick foil.
- Make sure they're spread out, so they cook evenly.
- Bake at 375 degrees Fahrenheit for 30-60 minutes, rotating every 15 minutes, and checking for desired doneness.
Serves 4.
