English Pub Fries

 


The secret to English Pub Fries is just to pre-boil them before you bake them. And if you don't know by now, I microwave things instead of boiling them, if I can get away with it. Here's how:

Ingredients:
  • 2.5 pounds yellow potatoes. 
  • 1 tsp. salt. 
  • 1 tsp. black pepper. 
  • 2 Tbsp. EVOO. 
Directions:
  1. Peel potatoes, then cut them in half, length-wise. 
  2. Pick up one half and place it on it's side.
  3. While holding the potato in place, make a parallel cut about 1/2 inch from original cut. 
  4. Repeat 2 more times per half potato, or until you run out of potato. 
  5. Then, take each one of those super fat chips, and cut them length-wise into fries. 
  6. Repeat for all potatoes. 
  7. Place fries in a 2.5 quart glass bowl, and fill with water until just covered. 
  8. Microwave on high for 10 minutes. 
  9. Remove from microwave. Drain. 
  10. Add salt, pepper and EVOO to fries, and toss with hands to coat.
  11. Transfer fries to a baking sheet lined with nonstick foil. 
  12. Make sure they're spread out, so they cook evenly. 
  13. Bake at 375 degrees Fahrenheit for 30-60 minutes, rotating every 15 minutes, and checking for desired doneness. 
Serves 4.
