Breakfast Sausage Skillet

Breakfast Sausage Skillet. 
Pancakes with Butter and Maple Syrup. 
Fresh Cantaloupe. 

Ingredients for the Skillet:
  • 2 Tbsp. Butter. 
  • 2 Tbsp. EVOO. 
  • 1/2 onion, diced. 
  • 2.5 pounds yellow potatoes. 
  • 1 green bell pepper, diced.
  • 1 red bell pepper, diced. 
  • 6 eggs, beaten and seasoned with 1/2 tsp salt and 1/2 tsp pepper.
  • 2 cups fresh grated mozzarella. 
  • 12 little smokies Smoked Sausage, diced. *I actually bought mine from the health food store, but this is in the same family if you have to get them from somewhere like Walmart. 
  • 1 bunch spring onions, diced small. 
  • 1 tsp salt. 
  • 1 tsp. black pepper. 
Directions
  1. Peel potatoes, then cut them (one at a time) in half, cross-wise.
  2. Lay each potato cut-side-down, and cut it in half from the top.
  3. Lay each half potato cut-side-down again, and then cut it into quarters. 
  4. Add all potatoes to a 2.5 quart glass bowl and fill with water until just covered. 
  5. Microwave on high for 10 minutes. 
  6. Remove from microwave, and drain.
  7. While potatoes are cooking, prep the remainder of your ingredients. 

8. If making pancakes, go ahead and make that batter now as well.

9. Cook the pancakes in the pan you will use later for the breakfast skillet. 


10. Then store them in the oven on warm, along with some butter and maple syrup while you make the breakfast skillet. 


11. Now add butter and EVOO to the pan and heat on Medium-High until melted and steaming.

12. Add salt, pepper and diced onions.

13. Cook for 5 minutes, stirring occasionally. 


14. Then add potatoes. 


15. Cook for 15 minutes. Stirring occasionally. 


16. Then add bell peppers. 

17. Cook for 15 more minutes, stirring occasionally.


18. Then add sausages. 

19. Cook for 15 more minutes, stirring occasionally. 


20. Scooch the vegetables to one side.

21. Pour the eggs on the other side. 

22. Cook for 3 minutes. 


23. Stir scrambled eggs into vegetables. 

24. Then add spring onions. 


25. Add mozzarella. Stir well. Turn off heat.


26. Now prep cantaloupe, if serving. 


27. Gather pancake fixin's from oven. Plate. Serve. 


Serves 4, or 2 with leftovers.
