Ingredients:
- 1 cup all purpose flour.
- 1/2 cup white sugar.
- 1/2 cup light brown sugar.
- 1/2 tsp salt.
- 1 tsp baking soda.
- 1 egg.
- 1 stick of butter (8 Tbsp.).
- 1 Tbsp. vanilla extract.
- 1 Tbsp. corn starch.
- 1 Tbsp. EVOO.
- 1 Lindt 70% dark chocolate bar.
- 1 tsp apple cider vinegar.
Directions:
- Microwave the butter for 1 minute.
- Add the cider vinegar, vanilla extract, and the egg, and whisk well.
- In a separate bowl, combine the flour, sugars, baking soda, corn starch and salt. Mix well with your hands, breaking up any sugar lumps.
- Combine wet ingredients with dry ingredients and whisk well with a fork.
- With a cutting board and a large serrated knife, cut up the chocolate bar into dice-sized pieces.
- Pour these into the batter and stir with a fork.
- Use your hands to form the dough into a ball.
- Then tear the dough into 2 equal pieces.
- Form both of those halves into balls.
- Tear each of those balls into halves as well.
- Then form all 4 of your dough segments into balls.
- Line a baking sheet with nonstick foil.
- Tear each of your 4 dough balls into thirds, and lay them on the baking sheet, 2 inches apart.
- Cover your cookies with cling wrap and place into the fridge for at least 1 hour, or up to a week.
- Bake them without the cling wrap for 14 minutes at 325 degrees Fahrenheit for chewy cookies, or 16 minutes for crispy cookies.
- Allow to cool for at least 5 minutes.
- Store them in a container with a lid in the fridge for up to 1 week.
