Melty Chocolate Chip Cookies

Ingredients:
  • 1 cup all purpose flour. 
  • 1/2 cup white sugar. 
  • 1/2 cup light brown sugar. 
  • 1/2 tsp salt. 
  • 1 tsp baking soda. 
  • 1 egg. 
  • 1 stick of butter (8 Tbsp.). 
  • 1 Tbsp. vanilla extract. 
  • 1 Tbsp. corn starch. 
  • 1 Tbsp. EVOO. 
  • 1 Lindt 70% dark chocolate bar. 
  • 1 tsp apple cider vinegar. 
Directions:
  1. Microwave the butter for 1 minute. 
  2. Add the cider vinegar, vanilla extract, and the egg, and whisk well. 
  3. In a separate bowl, combine the flour, sugars, baking soda, corn starch and salt. Mix well with your hands, breaking up any sugar lumps.
  4. Combine wet ingredients with dry ingredients and whisk well with a fork. 
  5. With a cutting board and a large serrated knife, cut up the chocolate bar into dice-sized pieces. 
  6. Pour these into the batter and stir with a fork. 
  7. Use your hands to form the dough into a ball. 
  8. Then tear the dough into 2 equal pieces. 
  9. Form both of those halves into balls.
  10. Tear each of those balls into halves as well.
  11. Then form all 4 of your dough segments into balls. 
  12. Line a baking sheet with nonstick foil. 
  13. Tear each of your 4 dough balls into thirds, and lay them on the baking sheet, 2 inches apart. 
  14. Cover your cookies with cling wrap and place into the fridge for at least 1 hour, or up to a week. 
  15. Bake them without the cling wrap for 14 minutes at 325 degrees Fahrenheit for chewy cookies, or 16 minutes for crispy cookies. 
  16. Allow to cool for at least 5 minutes. 
  17. Store them in a container with a lid in the fridge for up to 1 week.
