Crab Salad

 

Note: The following recipe serves 1. To meal plan using this recipe, replace the snack-sized bag of crab meat with a 24 oz. bag of crab meat, and multiply all of the other ingredients by 8. Store in the fridge until ready to use for up to 1 week. 

Ingredients:

  • 1 snack-sized (3 oz.) pouch of imitation crab meat, cut into bite-sized pieces. 
  • 1 stalk celery (rinsed, and trimmed, and diced). 
  • 1 tbsp. minced red onion. 
  • 1 tbsp. softened cream cheese. 
  • 1 tbsp. Hellman's mayo. 
  • salt and pepper to taste, or 1/4 tsp salt and 1/4 tsp pepper.
  • 1 tsp Old Bay seasoning (completely optional). 
Directions: 
  1. Add everything to a large bowl and stir well to combine. 
  2. Stuff into a Pita, if desired. Fills 2 half moons unless multiplied by 8.
