Ingredients:
- 7 pounds of yellow onions
- 2 tbsp EVOO
- 2 tbsp unsalted butter
- 1 tsp salt
- Up to 1 cup brown sugar
Directions:
- Cut up onions into chunks and toss into a 6-quart Dutch oven.
- Add remaining ingredients and cook on medium-low(4) for 4-6 hours, making sure not to burn by stirring every 5-10 minutes.
- Blend in Vitamix blender.
- Continue to simmer on the stove until onions reduce into a dough-like jam, attending constantly.
- cool to room temp. it's super hot.
- freeze in ice cubes.
Serves 20 as a spice.
