Homemade Almond Milk

 


If I could just buy good almond milk, I would, but it's either too watered down, and strangely grey/pink, or filled with stabilizers.

The home kind is easy enough, and just as cost effective.

Yields 3 cups

Ingredients:

  • 1 cup unsalted almonds
  • 3 cups filtered water 
  • Optional: 1 pitted medjool date, or tsp honey

Equipment:
  • Vitamix blender (yeah it was expensive, but I've had it 15 years).
  • Large deli container with lid to soak the almonds 
  • A sieve to drain the soaked almonds 
  • 1 large bowl with pour spout to catch the almond milk and pour it into a storage container 
  • Nut milk bag
  • Large deli container with lid for storage 

Directions:
  1. Soak the almonds in a large deli container with lid, with enough water to cover them. Soak for 8 hours.
  2. Drain them in the sieve and rinse them
  3. Toss them into the Vitamix with the filtered water 
  4. Add date, or honey, if using 
  5. Blend for 55 seconds 
  6. Pour into a nut milk bag that's been draped over the bowl that has the spout
  7. Squeeze the milk through the bag into the bowl
  8. Pour the milk into a large deli container with lid and store in the fridge for a week.
