Banana Salad with Peppers and Boursin Cheese Dressing

 


Yesterday we made a strawberry salad to go with the Zayka Butter Chicken, but today we were out of strawberries.

So when we made the Zayka Butter Chicken again, we wanted another salad, and I decided to use bananas instead.

I couldn't use balsamic with bananas, so I used Apple Cider instead. 

Then I remembered that feta goes great with cranberries, so I wanted to see if Boursin would go good with bananas. 

It totally does.

Salad:

  • 1 banana per person 
  • 1 red bell pepper per person 
Dressing:
  • 1 tbsp EVOO per person 
  • 1/2 tbsp Apple Cider Vinegar per person 
  • 1/4 tsp salt per person 
  • 1/4 tsp ground black pepper per person 
  • 1/2 tbsp herbed Boursin cheese per person 
  • 1 tbsp fresh minced onion per person 
Directions:
  1. Rinse, dry, de-stem, de-core, and dice the bell pepper. 
  2. Add it to a serving bowl. 
  3. Peel and slice the banana, and add it to the pepper. 
  4. In a separate bowl, combine dressing ingredients and whisk well. 
  5. Pour over salad and stir.
