Beef and Radish Stew (keto)

 


This is a keto spin on my beef and potato stew. We added celery for electrolytes (magnesium), and since celery goes well with Worcestershire, we swapped the balsamic vinegar for Worcestershire.

My potato stew has 2 onions in the recipe. Onions are not keto, so I used 1 onion instead of 2. Onions still tend to kick me out of ketosis, even when they fit within my macros, so keep that in mind.

Ingredients: 

  • 1 pound ground beef 
  • 1 yellow onion 
  • 3 bunches, or 3 cups of radishes 
  • 1 large celery stalk, or 2 cups of celery 
  • 2 cups of water 
  • 2 tbsp Worcestershire 
  • 2 tbsp soy sauce 
  • Salt and pepper to taste (sorry, I'm lazy)
  • 1 bunch, or 1 cup of fresh parsley 
Directions:
  1. In an instant pot or 6 quart Dutch oven, sauté the beef and onion (diced) over medium-high heat. 
  2. Add the remainder of the cleaned, trimmed and diced vegetables (radishes can be whole, but trimmed. Larger ones can be cut in half). 
  3. Add the remainder of the wet ingredients and cook on high pressure for 35 minutes. If using the dutch oven, bring to a boil, and simmer for 35 minutes.
  4. Mince the parsley and add it at the end. 
  5. Taste for salt and pepper and adjust to your liking.
Makes 4 large lunches.
