I recently discovered these yeast rolls in the frozen section of Walmart, and now I use them for everything from cinnamon rolls to pizza crust.
The sauce is made with Manwich, which has such an amazing balance of acidity, smokiness and sweetness. So good!
Ingredients:
- 16 ounce can Manwich Bourbon BBQ sauce.
- 3 frozen chicken breasts (40 ounces; boneless, skinless).
- 1 yellow or red onion.
- 8 ounces shredded mozzarella cheese.
- 6 frozen dinner rolls (Rhodes Bake N Serv).
- Garnish with butter and garlic powder.
Directions:
- Put 6 dinner rolls on a plate and cover with a medium glass bowl, and sit in a window to thaw; about 2 hours.
- Pour chicken in a 2.5 quart bowl and fill with water. Allow to thaw as well.
- After 2 hours, combine all the rolls together with your hands, and knead it until de-gassed. It should be one large roll now. Cover it with the bowl again, and leave it in the window for 2 more hours.
- Check the chicken for frozen spots. Drain the water and refill with new water. Allow to continue thawing for 2 more hours.
- Cut chicken into bite-sized pieces and place into an instant pot and sauté for 13 minutes, stirring regularly.
- While that's sautéing, grab your dough ball and form it into a pizza by using your thumbs in the center of the ball, and working your way to the edges by rotating and pressing and gently stretching.
- Lay stretched pizza onto a baking sheet lined with nonstick foil, and use your hands to stretch it out and gently flatten it into a round shape.
- Remember to be stirring your chicken regularly during all of these additional steps.
- Use a fork to make little holes all over the dough (to prevent air bubbles when rising.
- Dice the onion and place it into a large bowl.
- When the chicken is done, drain the broth and save it for other uses (you may have to cook it longer before consuming).
- Add chicken to onions, and top with Manwich and mozzarella, and stir well.
- Use about a third, or one half of this mixture to top the pizza with, making sure it's evenly dolloped with mixture.
- Bake at 450 degrees Fahrenheit for 12 minutes.
- Cut a tbsp of butter and smear the edges of the crust all over.
- Sprinkle crust with garlic powder.
- Cut into pizza slices and serve.
- Reserve remaining filling for another pizza.
Serves 2 per night, but up to 6 total.
