Queso Chili

 


Man, this treated my belly so good. Hope Kyle ends up liking it.

Ingredients:

  • 3 lbs ground beef.
  • 2 large onions, diced. 
  • 1 quart whole milk.
  • 7 oz American cheese. 
  • 8 oz cheddar cheese. 
  • 1 tsp salt. 
Add-in’s:
  • 1 can (7 oz) chipotle peppers in adobo. 
  • 1/4 cup jarred lemon juice. 
  • 1 can (4 oz) green chilies. 
  • 1 bunch cilantro, rinsed. 
  • 1/2 cup sour cream. 
  • 5 large cloves, or up to a whole bulb of garlic, minced. 
Directions:
  1. Brown ground beef in a large skillet. 
  2. While that’s cooking, dice onions and toss those in. 
  3. In a magic bullet, toss in all add-in’s (minus the garlic) and blend to combine. 
  4. Peel garlic, and mince it in a garlic press (I suppose you could have thrown this in the magic bullet as well 🤷‍♀️). 
  5. Once the beef and onions have finished cooking, transfer to a 3 or 4 quart storage container. 
  6. In the same skillet, add milk and bring to a boil over medium low heat. 
  7. Add cheese and salt, and stir until melted. 
  8. Add your chipotle mixture, as well as your minced garlic, and stir to combine. 
  9. Pour this mixture (Queso) over the burger, and stir well.
