Kyle's Cocoa Beach Mug Cake

 





I came up with the recipe, but Kyle is the one who enjoys it. Hence, Kyle's Mug Cake. 

This is a dark chocolate mug cake with a coconut cream cheese frosting. Keto.

Ingredients for the cake:

  • 2 tbsp blanched fine almond flour
  • 1 tbsp coconut flour
  • 2 tbsp cream cheese
  • 1 tbsp unsalted butter (like Kerrygold)
  • a pinch of salt, or 1/16 of a tsp
  • 1/2 tsp baking powder
  • 2 tbsp dark cocoa powder
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 tsp coconut extract
  • 1/2 tbsp nutritional yeast (optional, for healthiness and yeastiness)
  • 1.5 tbsp erythritol
Ingredients for the frosting:
  • 3 oz cream cheese
  • 3 tbsp butter
  • 2 tbsp dried coconut flakes (unsweetened)
  • a pinch of salt, or 1/16 of a tsp
  • 1 tsp vanilla extract
  • 2 tsp coconut extract
  • 1 tbsp erythritol
Directions for the mug cake:
  1. Melt the butter and cream cheese in the microwave for 15 seconds. Stir well. 
  2. Microwave it again for 15 seconds. Stir again. 
  3. Add the egg, and stir well. 
  4. In a separate bowl, combine all of the remaining ingredients for the cake, and stir well. 
  5. Add this to the wet ingredients and stir again. 
  6. Pour this evenly into 2 small mugs, or ramekins. 
  7. Microwave each separately for 60 seconds. 
  8. Put the mug cakes in the freezer while you're making the frosting, so they will come out of the mugs/ramekins easier. 
Make the frosting:
  1. Add the butter and the cream cheese to a bowl, and microwave for 15 seconds. Stir well. 
  2. Microwave for 15 more seconds. Stir well. 
  3. Add the remaining ingredients for the frosting and stir well. 
Assemble the cake:
  1. Remove the cakes from the freezer, and turn them upside-down over a plate. You may have to encourage them to come out by tracing around the edges with a butter knife. 
  2. You could skip this step entirely, and just dollop your frosting on top of the cakes and eat it out of the mug. Or...
  3. Once the cakes are on the plate, scoop out half of the frosting for one of the cakes and spread it until it covers the cake. 
  4. Then top that with the other cake and repeat with remaining frosting. 
  5. Cut this cake down the middle, and enjoy half at a time, or all at once. 
Note: It's better after it's been in the fridge for an hour.
