Turkey Sausage Breakfast Casserole

Ingredients:

  • 2 pounds turkey sausage
  • 18 eggs
  • 1 pound mozzarella 
  • 1 pint heavy cream
  • 2 onion, chopped 
  • 1 tsp salt
  • 1/2 tsp black pepper 
  • Serve with 1/8 cantaloupe + 1/7th of a 1/8th slice to make 14 servings. 
Directions:
  1. Preheat the oven to 350°F. Grease two 9 x 13“ casserole dishes.
  2. Heat a large nonstick skillet to medium heat.
  3. Add the sausage and onion, and cook, crumbling with a spoon or a spatula, until it is browned, about 10 minutes.
  4. Remove from heat and set aside.
  5. While the sausage cools, in a large bowl beat the eggs cream salt and pepper.
  6. Fold in the sausage and cheese.
  7. Divide between both baking dishes and bake until set (about one hour).
  8. Call slightly before slicing each casserole into 14 pieces.
  9. Store in 14 individual storage containers with lids and transfer to the fridge until ready to serve.
  10. When ready to serve, microwave for one minute, flipping midway through.
  11. Serve with an eighth of a cantaloupe.
