Entire meal with cantaloupe: 6643 calories, 208g/438g/442g. Per person: 475 calories, 15g/31g/32g
Ingredients:
- 2 pounds turkey sausage
- 18 eggs
- 1 pound mozzarella
- 1 pint heavy cream
- 2 onion, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- Serve with 1/8 cantaloupe + 1/7th of a 1/8th slice to make 14 servings.
Directions:
- Preheat the oven to 350°F. Grease two 9 x 13“ casserole dishes.
- Heat a large nonstick skillet to medium heat.
- Add the sausage and onion, and cook, crumbling with a spoon or a spatula, until it is browned, about 10 minutes.
- Remove from heat and set aside.
- While the sausage cools, in a large bowl beat the eggs cream salt and pepper.
- Fold in the sausage and cheese.
- Divide between both baking dishes and bake until set (about one hour).
- Call slightly before slicing each casserole into 14 pieces.
- Store in 14 individual storage containers with lids and transfer to the fridge until ready to serve.
- When ready to serve, microwave for one minute, flipping midway through.
- Serve with an eighth of a cantaloupe.
